The one known as red lentil or coral lentil actually has a range of colors that is closer to orange. It is a typical Indian legume, with its recognizable lentil flavor, but with a slightly sweeter touch. Their flavor is subtle and they have a good ability to absorb the flavors of the broth in which they are cooked. They are ideal for making all kinds of curries or for thickening soups. In general, small in size, they do not require much cooking, approximately 30 minutes, and they do not need to be soaked, just wash them well before cooking. If we overdo the cooking time they get a little floury, at which point they begin to act as a thickener in soups. There is also a variety of yellow lentil, but in our opinion it is practically identical to the red one, except for the color.
desFrom a nutritional point of view, red lentils have less fiber than brown lentils but their protein content is higher. For this reason, it is one of the legumes widely consumed by the large vegetarian population of India.
