The alembic (from the Arabic al-inbīq الأنبيق, from the Greek ambix ἄμβιξ, 'cup') or alquitara (from the Arabic al-qaṭṭārah القطارة, 'the one that distills') is a device used for the distillation of liquids through a process of evaporation by heating and subsequent condensation by cooling. It was invented by Al-Razi, a genius of universal science, around the 10th century of our era, to produce perfumes, medicines and alcohol from fermented fruits.
It is a distillation toolsimple that is constituted by a boiler or retort, where the mixture is heated. The emitted vapors exit through the top and are cooled in a coil located in a water-cooled container. The resulting liquid is collected in the final tank.

The process consists of first evaporating the fluids with the lowest state change temperature, so that, after condensation, they are more concentrated in the final medium. In this way aromas or alcohols are concentrated.
Laboratory stills are usually made of glass, butused to distill alcoholic beverages are usually made of copper, because this material does not impart flavor to alcohol, resists acids and conducts heat well.

When liquids from the alcoholic fermentation of fruits are distilled, as alcohol boils at a temperature (80 °C) lower than that of water, the vapors that are first formed are those of the former, although mixed with a small proportion of water. , and a substance with a higher alcoholic strength than the original is distilled.

The basic idea would be to heat the mixture to be distilled in the boiler. As the temperature increases, the most volatile products are separated and will begin to rise from the capital, which must have a certain volume in relation to that of the boiler, to avoid condensation of the evaporated liquid, and from there to the swan neck, many times transformed into a coil in which the steam condenses by reducing the temperature, and is collected in the final container in liquid form, helped by the refrigeration unit.
