Ras el hanout is a mixture of spices, roots, bark and dried flowers. It literally translates as “the head of the spice shop”, understood as the most authentic, the personal selection of the shopkeeper.
There is no definitive set combination of spices that make up Ras el hanout. Each store, company or person would have their own secret mix containing more than a dozen species. They typically include cardamom, cloves, cinnamon, ground chilies, coriander, cumin, nutmeg, allspice and turmeric.
Some recipes include more than a hundred ingredients, some rarely found in western food, such as ash berries, tiger nuts, Grains of Paradise, orris root, monk's pepper, cubeba or dried rosebud. Usually all the ingredients are roasted and then ground together. Individual recipes are often improvised.
